Witches Cauldron Vegetable Stew

Disclaimer: My cauldron isn’t that big, but it is the biggest one I have. Small kitchen – gotta work with it!

Hello Again!!
Remember previously I said Fall is awesome and I love it all? I do!
Annnnd…my schedule this October is filled with volunteer commitments and work. It all kind of came at once. Between the Coast Guard Auxiliary, Friends of the Library, my current job and the other one that is supposed to be starting soon, sprinkle in a dash of life and my schedule is full! But today was my only free day to get some fall in – to go to pumpkin patches, petting zoos, kids areas and playgrounds with the cool wooden cut outs and spoopy, kiddie, decorations! But it rained. And a cold front is moving in. So, I made breakfast, packed a lunch and jumped in the station wagon to go take in some Fall with the family!

We made the best of it. We went to 2 small family farms, spent $10 on 2 small pumpkins, 2 gourds and some apples. (Plus spent a quarter to feed the angry geese). But the important thing is, my daughter had a great time and she got to walk through a pumpkin patch and pick out those pumpkins!

The rain is supposed to go away and we might drive to one more small place. While we wait, I decided to start dinner, especially since my daughter fell asleep on the way home. What a perfect day to have a remake of that veggie soup I showed you guys a week prior – but this time on my home turf – in MY kitchen. (Which is small and lacking – but it is mine. : D).

Most importantly, I need my kitchen dogs. I have dogs to pick up the scraps that drop on the floor. They know when something is going to happen, and they were at the ready:

Next I got my cauldron and put 2 boxes of vegetable broth in said cauldron. I put water in the boxes (75% full) and dumped those in to the cauldron as well. Then I added 2 onions:

I also prepped some vegetables for my Slow Cooker Vegetable Chili I am making tomorrow! That way tomorrow’s dinner should be low maintenance.

I am going to go enjoy the rest of the day, as the rain has stopped. Maybe hit up one more farm. In the meantime, I will put a lid over this stew. It will be mighty tasty tonight for dinner!

    Alright!
    My cauldron supported 14 ladle folks of stew.
    I measured an average ladel, and it filled a measuring cup.
    So, 2,074 calories divided by 14 cups ended up being, guesstimated, 122 calories ladle/cup!
    My family loved it!
