Ground Beef and Scrambled Eggs
Hello everyone! Sorry this is getting to you a little later than I wanted, but I am writing none the less. This past Monday I had an engagement that took up most of my day. I had to drive several hours, be a part of an event and then turn around and come home. I am very lucky that my schedule allows for me to be able to participate in events on a weekday, but it is tiring and it scrambles my internal clock. Because Monday is Family Dinner!
I rushed home from my engagement. I was able to get to my house 1.5 hours before dinner was set to be on the table. I was running on less than 4 hours of sleep, because I have some crazy side jobs right now and a craz…wonderful 3 year old! Luckily, so so very luckily, I had ground beef and scrambled eggs on my calendar for Monday night. Nice! Easy! I could get it done. But sadly, only partly done. I confess. I wanted to prep a fruit and a vegetable with the meal (green beans and sliced apples) but I was so exhausted, I skipped it. And I am a bit embarrassed too, as we had no leftovers. Any way…
Ingredients:
-1 lb Ground Beef
-18 Eggs, cracked and beaten
-4 oz (half package) Mushrooms
-1 Large Onion
-1 Bell Pepper (bought green this week – cheaper!)
*When I make this meal again, I am going to but 24 eggs in. I think 18 was good, but 24 would have been better.* I was smart and pre-cut most of my veggies the day before. I would recommend cutting your veggies before turning on the stove. Ground beef and eggs can burn and I don’t like wasting food or serving a sub-par meal. It is not worth it to me.
I pulled out the biggest cast iron pan I have and set it over the flame. There is a local meat market that I purchase most of my meat through. The ground beef I get from them is quite lean so I rarely ever have to drain drippings off of the meat. I cooked the ground beef and just as it was finishing browning, I threw the chopped veggies in with the beef. Nifty thing about mushrooms, it is kind of hard to burn them. When mushrooms cook they release moisture. That moisture helps to prevent everything else from burning. After the veggies were soft, I added the eggs in and stirred almost continuously. And that is it. When the eggs were done, the meal was done.
Very simple meal. And it was well received. My brother commented on the smell of the meat and veggies in the cast iron before the eggs went in. My mother said it had been a while since she had the dish, and enjoyed it. My 3 year old daughter ate her serving. And like I said, I ran out of food. But I was so tired, I really didn’t have it in me to do much else. (Sorry I do not have any pictures. The lack of sleep made it difficult to remember to take one).
